My name is Mrs. Omowunmi Olufemi, a Ph.D. student of Food Processing and Value Addition. The Food Processing and Value Addition option is aimed at changing supply-based activities to industrial demand-based by adding values to agricultural materials that are compatible with the needs of the West Africa sub-region. CEADESE happens to be the only institute offering the programme as a postgraduate discipline in Nigeria. The Centre has really taken me to the point where my dreams could be actualized in terms of quality training, which has really exposed me to the basics of Food Processing and how value can be added to food so as to ensure product quality and hygiene. Also, the Internship programme has given me new insights and motivation to pursue a career, and to perform certain tasks in research better on the basis of the experience in the research methodologies learnt. In addition to this, I was sponsored alongside four other Ph.D. students in my programme for a short course on Food Safety for Nutritionists and other Health Professionals, which was held between June 15 and 19, 2015 at the International Scholars’ and Resource Centre, Federal University of Agriculture Abeokuta (FUNAAB). The programme was jointly organised by the International Life Sciences Institute, University of Ghana, Legon and FUNAAB. I was exposed to the basis of Food Security in relation to food handling, hygiene and processing at the end of the short course, and we were also encouraged to be ambassadors of food safety in our environment.
